Peanut Butter Bread

  • 2 cups gluten-free flour
  • 1 cup coconut sugar or other alternative sugar
  • 1 ripe banana
  • 3 teaspoons baking powder
  • 2 chia eggs (2 tablespoons ground chia mixed w/ 6 tablespoons water)
  • 1 teaspoon sea salt
  • 1 cup smooth natural peanut butter
  • 1 cup almond milk
  • Garnish with sugar-free jam and ripe banana slices


  •  Preheat oven to 350°F
  • Grease a shallow loaf pan
  • Add ingredients to blender
  • Cleanblend
  • Pour into greased pan
  • Bake until cooked through (depending on thickness this could be between 30-60 min.)

Notes: This vegan and gluten-free blender bread is a healthy twist on the classic comfort food peanut butter and banana sandwiches. Serve with berries or jam. Peanut butter is an excellent source of protein, fiber, vitamin C, niacin, and vitamin B6. It also contains thiamin, iron and potassium. We used coconut sugar as a healthier sugar substitute that won’t elevate blood sugar levels to the same degree that refined sugar does. Enjoy!
